Chocolate Walnut Protein Cookies | Fertility Naturopath

Some days you just need a little chocolate in your life! These cookies are the answer to chocolate cravings, but they also come packed with healthy fats and protein meaning you might be able to stop after just one… but maybe you won’t want to!

How do these cookies fit into a healthy diet? Simply think of them as a treat to enjoy after a balanced. meal.

P.S. They keep for up to 1 week in the fridge, and they freeze well.

Ingredients:

  • 1/2 cup almond meal

  • 1 scoop vanilla or chocolate protein powder (should be about 25g)

  • 1/4 cup raw cocoa powder

  • 1/4 tsp baking powder, aluminum-free

  • 1/8 tsp baking soda

  • 1/4 tsp sea salt

  • 1/2 cup maple syrup

  • 1/2 cup sugar-free, all-natural almond butter

  • 3 Tbsp almond milk

  • 1 tsp vanilla extract

  • 1/2 tsp almond extract (don’t skip this)

  • 1/2 cup dairy-free dark chocolate chips

  • 1/4 cup chopped walnuts

Instructions:

  1. Preheat your oven to 350 degrees fahrenheit. Crumple a sheet of parchment paper and lay it out on a baking sheet. Crumpling the parchment paper makes it easier to shape onto the baking sheet.

  2. Combine all ingredients except chocolate chips and walnuts in a mixing bowl until smooth. You may need to add more almond flour if the batter is too wet.

  3. You can now add chocolate chips and walnuts and stir until just combined.

  4. Use a small spoon to scoop out the dough. Use your hands to roll it into approximately 24 one-inch balls and then place each one on the baking sheet.

  5. Flatten each cookie slightly using the tines of a small fork.

  6. Bake for 10-12 minutes.

  7. Remove cookies from the oven and let cool for 5 minutes before serving.
