Powerballs

Powerballs are an excellent, balanced snack option to enjoy throughout the week.

I make up a batch on the weekend for my family to snack on all week.

I rest easy knowing they are getting a yummy and balanced option.

Prep Time: 20 minutes + a few more minutes for rolling the balls

Yield: 24+ depending on the size of the ball you make

Serving Size: 2 balls

Ingredients:

1/2 cup hemp hearts

1/2 cup raw, unsalted sunflower seeds

1/2 cup raw, unsalted pumpkin seeds

4 plain brown rice cakes (you can omit these if you are avoiding grains)

1 cup rolled gluten-free oats (you can omit these if you are avoiding grains)

2 Tbsp raw cacao powder

1/4 cup honey (or maple syrup)

1 cup all-natural almond butter (or seed butter)

1/2 cup raw, unsalted sesame seeds (optional)

Method:

  1. Place first 6 ingredients in the bowl of a food processor.

  2. Process until blended and crumbly.

  3. Add honey and almond butter. Process until mixture is an even consistency.

  4. Using a tablespoon, scoop out mixture and shape into compact balls that stick together.

  5. Roll each ball in sesame seeds (optional) and set on a platter.

  6. Place in a resealable container and refrigerate for the week. Enjoy as needed for a delicious snack!
